Crockpot Chicken Tacos

Recipe: Crockpot Chicken Tacos

Ingredients

  • 6 boneless, skinless chicken breasts
  • A chopped onion (optional)
  • A chopped green pepper (optional)
  • 1 packet taco seasoning
  • 16 ounces salsa (that’s 2 cups if you’re using a larger bottle).
  • Flour tortillas, corn tortillas, or taco shells
  • Toppings: your choice of lettuce, sour cream, grated cheese, tomatoes, salsa, diced purple onions, olives, guacamole, etc.

Instructions

  1. Put the chicken in a Crockpot. Add the onion and pepper if you want.
  2. Mix the seasoning with salsa and pour over chicken. You can add some more water if you think it needs more liquid, but the salsa and the chicken will produce ample liquid as it cooks.
  3. Cover and cook on high for 4 to 6 hours or low for 6 to 8 hours.
  4. The chicken is done when it can be shredded easily with a fork.
  5. Lift the chicken out and shred it with a fork.
  6. Serve with soft flour tortillas, a spoonful of the veggies if you used them (lift them with a slotted spoon to drain out excess liquid), and your favorite toppings. Try any combination of lettuce, sour cream, shredded cheese, and tomatoes.

3rd Annunal Spin With Survivors

During the month of January, Western New York Wellness will be hosting their 3rd annual “Spin with the Survivors” Virtual Spin Tour and Fundraiser (www.wnywp.org), which focuses on bringing maximum visibility to the fight against cancer. Centered on cycling, the Western New York Wellness Program makes available FREE indoor and outdoor cycling services to all cancer survivors in the Rochester, New York and surrounding areas.

I cannot tell you how much this group has helped me since I became a member in 2006. This December 31st will mark 5 years that I have been cancer free. I credit this group with keeping me active and healthy.

Please help in this fundraising event with your generous pledge. We all know someone touched by cancer. The money that you pledge will contribute to funding the FREE physical activity programs offered by Western New York including:

- weekly outdoor bike rides (during the summer)
- weekly indoor spin classes (during the winter)
- outreach and education programs
- walking program for those just emerging from treatment and are not yet able to ride
- gym membership grants

The “Spin with the Survivors” event also provides a unique opportunity for all to help. This is our chance to help directly and in that spirit, I’ve chosen to Spin with the Survivors, and ask that you support me, remembering that your donations are tax-deductible.

Network Lights

Network Lights is a Windows program, which blinks keyboard LEDs (Light Emitting Diode) indicating outgoing and incoming network packets on network interface.

Network Lights lets you monitor network activity (upload/download) from your keyboard ScrollLock and NumLock indicators. Each LED will flicker when network traffic is detected.

Using

This utility is a standalone executable. Run the program, you’ll see a new system tray icon.
Now you can monitor your network traffic using the ScrollLock and NumLock leds on your keyboard.
Use the system tray icon (click the mouse) to customize program settings.

This utility is released as freeware. You are allowed to freely distribute this utility via floppy disk, CD-ROM, Internet, or in any other way, as long as you don’t charge anything for this. Another New York Disappointment

ON WEDNESDAY December 2, 2009, gay-rights marriage was shot down by the New York Senate. Apparently this was accomplished according to party lines…but I don’t want to talk about party lines. I’m sick to death about hearing about party lines.

I want to talk about PEOPLE this affects.  I have heard multiple reasons about the opposition to gay rights marriage. Last year I remember seeing Monroe County Executive Maggie Brooks on the news expounding about the costs that would increase as a result of such law. Nothing personal, just business.

Since you put it that way, it’s not so insulting. (enter scathing sarcasm undertone here)

The New York Times quotes deputy republican leader Tom Libous as saying “I just don’t think the majority care too much about it at this time …”.  He goes on to give reasons about New Yorkers being out of work, or wanting to see reduced spending. Sure, New Yorkers ARE concerned about those things.  But I think that’s a convenient excuse. I find it laughable since the Albany Legislature has repeatedly proven themselves as being inept, incapable, and completely unwilling to deal with the crises, fiscal and otherwise, this state is dealing with. To say they shot it down because they’re working on something else? Come now, Tom. That’s … quite insulting I’d say.

Today’s DID YOU KNOW segment:    The New York Constitution states that “No member of this state shall be disfranchised … unless by the law of the land.”  How convenient.

There is a saying, a very old saying, that goes “Those who will not learn from history are doomed to repeat it.” Doesn’t this seem familiar?  Doesn’t anyone remember the plight of our black bretheren? Or women? Homo or hetero, we all have the same ‘unalienable’ rights.  I know we do, because it’s written in a document called The Constitution.  Albany may have heard of it, it is the result of the second constitutional convention in 1787.

This marriage bill is obviously so important to a lot of people not only here in New York, but across the nation. It is time to do something about it, Senators.

Use zip ties to repair a broken ethernet plug

Have you ever had a perfectly good ethernet cable only to find that the tab on the ethernet plug had snapped off? Over at Instructables they have thrown up a nice little “How-To” on how to fix this using a couple of zip ties, a utility knife, and pliers.

Thoughts / Musings

SO MY FRIEND SHANNON, who is the caretaker of this website, asked me if I was interested in writing/posting occasionally on hometownpulse.com.

Sure! Yes. Maybe? What would I write about?

I hate to say it, but I think I might be acting my age. I listen to talk radio all day at work. I read often (I just got done with a bio on Aaron Burr, a good read). News stories gets me fired up, and causes me to shake my head in wonderment (both in good ways and bad). I think, I could write an opinion on that. Afterall, we all have them, right?

When I was younger, I would laugh or chuckle at times at people like me (those that were the age I am now, late 30s) and think: NO way will I be like that. hahaha, fools!
I was woefully, blessedly ignorant of the world around me. My priorities were having some cash in my pocket, a good CD in the car to listen to, a full tank of gas and a few of my friends to cruise around with.

These days, I still appreciate a good CD to listen to on my way to work, and I like going as long as I can on a tank of gas. Now I’m older, my priorities have shifted … so I thought, maybe if I write something about things … anything I want (Shannon said I could!) maybe others will read. Maybe they’ll agree or disagree or call me names. Maybe not, but it doesn’t matter.

Everyone is entitled to their opinion.
